Pagi ni, cuba penkek jagung pulak. Actually, ada bahan buttermilk dalam resipi ni.Saya tak pernah beli. Saya pun tak tau buttermilk kotak tu, ada cop halal ke tak. Tetapi kalu nak tahu, bole intai2 kat cold storage atau buat home-made. kalau nak cuba penkek versi kak hanieliza pun ada . Oh, ya, ada versi saya dan versi asal dari buku.. :)
VERSI NURINDAH : (tak guna buttermilk)
Griddle Cakes or Sweetcorn Pancakes - Diubahsuai oleh Nurindah, sumber Children's healthy & fun cook book
110gm tepung gandum
1 sdt soda bikarbonat
1sdt serbuk penaik
1 biji telur
100ml susu segar
75gm isi jagung - (fresh, frozen or tinned) - saya guna jagung tin whole kernel ayam brand
Susu segar lagi untuk mencairkan skit adunan.
1 sdb mentega (saya tambah ni, kalau taknak pun takpe)
option : garam , kalau tak bubuh mentega...
CARA:
1. Campur semua bahan hingga menjadi batter yang sesuai untuk pancakes.
2. Panaskan pan non stick, letak sedikit majerin atau minyak, tuang 1 senduk adunan.
3. Biar garing, baru balikkan penkek.
4. Bila dah masak, baru angkat. Hidangkan dengan sebarang sosej, burger, atau nak yang manis, madu atau maple syrup. (Dalam resipi, griddle cakes dihidang bersama bacon). It is savoury pancakes actually...
RESIPI ASAL

Ingredients:
110gm plain flour white
1 tsp bicarbonate of soda
1 tsp baking powder
1 egg
100ml milk
75gm sweetcorn (fresh, frozen, tinned )-
284ml carton buttermilk
3 tsp sunflower oil
salt and pepper
Note: Buttermilk is the low-fat liquid left after the cream has been removed when making butter. Commercialised buttermilk is made from skimmed milk and milk powder and is cultured in the same way as yoghurt. (i don't know it is halal or not)

No need to buy Buttermilk if you can get it. For your info, Buttermilk is easily available in Singapore.Here is the substitute:
1 cup of fresh milk + 1 Tbsp. Lemon Juice or Vinegar. Let it sit for about 5 to 10 mins. before using.
METHODS :
1. Pour the milk into a jug and then carefully crack the egg straight into the jug. Mix the milk and egg together with a fork or small whisk.
2. Sieve the flour, bicarbonate of soda, baking powder, and a pinch of salt into a large mixing bowl. Make a well in the centre of the bowl.
3. Pour the milk and egg mixture into the well. Then carefully, add the buttermilk and sweeetcorn.
4. Gently beat the mixture until the ingredients ar combined.
5. Heat half the oil into the pan and then ladle in the batter to make griddle cakes about 10cm in diameter.
6. Cook for 2-3 minutes, until goldn underneath. Flip and then cook the other side. Make 12 cakes in this way, adding the rest of the oil when necessary..

ReplyDeletesedapnya... tadi pagi kakchik plan nak buat pancake juga tp minyak zaitun dah habis so, goreng karipap je. kakchik pun tak berani nak guna buttermilk sb takde logo halal, dah tengok kat market hr tu. nanti nak cuba juga resepi nur ni.

ReplyDeleteoh, berkhasiat tu, guna minyak zaitun. ya kak? rupanya takde cop halal. saya jumpa versi auntie yochana ni, buat homemade buttermilk. nanti saya cuba.. :)
